Ingredients
- 1 eggplant
- Salt to taste
- Olive oil to taste
- Chimichurri to taste
Instructions
- Cut the eggplant into thick slices.
- Season with salt, olive oil and chimichurri.
- Place in the airfryer basket and program at 200°C for 20 minutes.
- Stir halfway through.
2- Eggplant Chips in the Air Fryer
Ingredients
- 1 medium eggplant
- 1 tablespoon of olive oil
- Salt to taste
- Pepper to taste
- Paprika to taste
- Oregano to taste
Instructions
- Cut the eggplant into thin slices.
- Season with olive oil, salt, pepper and other seasonings.
- Place the eggplants in the airfryer basket heated to 180°C for about 15–20 minutes,
- Turn the eggplants halfway through.
- Let it cool a little before serving.
3- Stuffed Eggplant in the Air Fryer
Ingredients
- 2 medium eggplants
- 400g of ground beef
- 1 chopped onion
- 2 cloves of garlic, chopped
- ½ cup tomato sauce
- ½ cup grated parmesan cheese
- Salt to taste
- Pepper to taste
- Oregano to taste
- Olive oil to taste
Instructions
- Cut the eggplants in half lengthwise and carefully remove the pulp, leaving a thin border (about 1 cm). Chop the eggplant pulp into small cubes.
- In a large pan, sauté the onion and garlic. Add the ground beef and cook until golden.
- Add the tomato sauce, salt, pepper and oregano. Mix well and let cook for about 15 minutes, stirring occasionally.
- Add the chopped eggplant pulp to the sauce and cook for another 5 minutes.
- Fill the eggplant shells with the meat filling and sauce. Sprinkle with grated Parmesan cheese.
- Cover the eggplants with aluminum foil and place in an airfryer heated to 180°C for around 20 minutes.
- Remove the foil and bake for another 10 minutes.

Ingredients
- 2 medium eggplants
- 1 egg
- ½ cup breadcrumbs
- ¼ cup grated parmesan cheese
- Salt to taste
- Pepper to taste
- Smoked paprika
- Olive oil
Instructions
- Cut the eggplants into medium slices.
- On a plate, beat the egg with a fork.
- In another dish, mix the breadcrumbs, parmesan cheese, salt, pepper and paprika.
- Dip each slice of eggplant in the beaten egg and then in the breadcrumb mixture.
- Spray the eggplant slices with olive oil and place in an airfryer heated to 200°C for around 15–20 minutes, turning the slices halfway through the time.
